Diabetes is one of the most common health problems among Indians. Usually the diabetic patient has to make several changes in his/ her lifestyle, and food surely is one of the many things. But being diabetic does not mean that you cannot eat tasty food.

Here are some very easy recipes for diabetic patients, which are not only healthy for their body but will surely appease their taste buds. The first amazing recipe is,

Adai

A very popular South Indian snack, Adai usually calls for good amount of rice. But this being a diabetic recipe, we will use a nominal amount of rice in the preparation. This way you do not have to worry about your sugar levels.

You will need

  • Rice – 1 tbsp
  • Masoor Dal / Split red lentil – 3 tbsp
  • Green Moong Dal / Split green gram – 3 tbsp
  • Urad Dal / Split black lentils – 1 tbsp
  • Fenugreek Seeds – 1 tsp
  • Green Chillies – 2 (finely chopped)
  • Ginger – ½ tsp (grated)
  • Coriander Leaves – 2 tbsp (finely chopped)
  • Salt – as per your taste

Procedure

First you need to soak rice, dals and fenugreek seeds in water for 2 hours. Make it a point that you soak it in separate vessels. After two hours, drain all these ingredients; combine it in a mixer-blender to make a smooth paste. You also need to add asafoetida to this mixture and grind it well with enough quantity of water. Once the paste is made, add chopped green chillies, coriander leaves and salt to it. Now add a little water so that the paste can be used as a batter. Keep in mind that we do not want the batter to be runny in texture that is why you need to be very careful with the water quantity.

The next step is to heat a non-stick pan and grease it very lightly with oil. Once the pan is warm, spread around 2 tablespoons of the batter on it. You can spread the batter in the usual round shape or opt for a square/ rectangle. Just see to it that the batter is spread evenly so that it gets cooked well. Cook on the both sides of the Adai until it turns golden brown in color. In case you prefer crispy Adais, then keep the heat at medium flame and cook the batter.

Your tasty and healthy Adais are ready. Eat it hot with garlic tomato chutney or chilli coriander chutney. This batter makes 8-10 Adais. Enjoy with your family!

Chilli Fried Potatoes

A mouth-watering, low calorie recipe Chilli Fried Potatoes can be had by diabetics whenever they crave for something rich in tasty yet easy on sugar and cholesterol levels. Here is how you can cook it:

You will need

  • Potatoes – 450 gms
  • Onion – 1 (small, thinly sliced, separated into rings)
  • Cheddar Cheese – ½ cup (shredded)
  • Chilli Powder – 1 tsp
  • Olive Oil – ½ tsp
  • Salt – 1/4th tsp

Procedure

Boil the potatoes in a pressure cooker for 2-3 whistles or until it is cooked well. Once boiled, keep the potatoes aside to cool down. Now peel the potatoes and dice them into medium size cubes.

Now take a non-stick pan and heat oil in it at medium to high flame. (You can use the latest Flipkart offers to buy non-stick cookware). Once the oil is heated add sliced onion into it and sauté for around 3 minutes. Now that the onions have become tender diced potatoes, chilli powder and salt. Keep stirring the potatoes and let it cook for another 5 minutes. After 5 minutes the potatoes would have turned into light brown in color. The next step is to add the shredded cheese over the potatoes. Now cover the pan and remove it from heat. Let the cheese melt down on the potatoes. Serve hot as a snack or side dish for lunch/ dinner.

These are some of the very easy, tasty and at the same time healthy for diabetic patients. And as it is often said that diabetics should avoid having tea, here is a recipe of Masala Chai which diabetic patients can have without any guilt.

Masala Chai

You will need

  • Milk – 1 cup
  • Tea Leaves – 4-6 tsp
  • Sugar-Free – 4 measures
  • Chai Masala – 1 tsp

For Masala

  • Cinnamon – 1 tsp
  • Green Cardamons – 4
  • Black Pepper – 16 balls
  • Nutmeg – 1/4th teaspoon (grated)

Procedure

Let us first start with the chai masala. You need to grind all the ingredients in a dry mixer-grinder. See to it that the grinder is not moist as it is not good for the masala. Once grinded, let the powder cool off and then store it into an air-tight container.

Now for the tea – boil around 3 cups of water in a pan. Add tealeaves, milk and masala powder to it. Now add Sugar- Free to the solution and bring the mixture to boil. After a couple of minutes, take the pan off the flame and strain the tea in your favorite cup. Your masala tea is ready!
